A Biscoff cookie is a brand name of Speculoos cookies, a deep caramel spiced shortbread cookie originating in Belgium. The name ‘Biscoff’ comes from the words Biscuits and Coffee, it’s no wonder they’re perfect dipped into a fresh cup of joe, but we thought why not ice cream? Our dairy-free base is combined with loads of crushed Biscoff cookies, cinnamon and vanilla extract for the ultimate Biscoff’y inspired treat!
