Ube is a sweet purple yam that is native to the Philippines and is grown mainly in Southeast Asia. The word ube (pronounced “ooo-bay”) comes from the yam’s name in Tagalog, the national language of the Philippines. The flavour profile can be described as slightly earthy, nutty and sweet and is commonly used in Filipino desserts. We’ve created our own “ube halaya” aka ube jam, made by cooking down purple yams, condensed and coconut milk and sugar and added it straight to our sweet cream base. House-made cheesecake pieces are added throughout the purple-hued base to complement its warm and nutty flavours.
