Kathy’s Cookie Dough (V)

The original Village GOAT, Kathy Friley (Billy Friley’s mom of course) makes the most delicious cookies, and we love churning that dough into ice cream. This summer, Kathy makes her triumphant return, this time in an all vegan version. We’ve packed a vanilla, soy-coconut base with house-made oatmeal cookie dough and dark chocolate chips until it’s overflowing with the delicious nostalgia of stealing a taste before the cookie’s been baked (because really, why wait?).
